RASPBERRY, LEMONADE ICES

Child (and adult) tested and approved 😉 These ice lollies, or popsicles as you may call them are sweet and sour all rolled into one. Ideal for warm spring or hot summer days, they are refreshing, utterly delicious and nutritious too. Choose organic lemons and raspberries were possible, natural or local honey if you can find it, and organic coconut water (that will help you to avoid the nasties often associated with processed or sweetened varieties).

8-10 ICE LOLLIES

Ingredients
  • Honey 1/2 cup
  • Lemon Juice 1/2 cup
  • Fresh Raspberries 1/2 cup
  • Water 3 cups

EQUIPMENT – LEMON JUICER + ELECTRIC BLENDER + STRAINER

Instructions
  1. Juice the lemons and strain.
  2. In a small pan add the lemon juice, honey + water.
  3. Heat on low for 2 mins (until mixture is well combined).
  4. Pour mixture into blender, add raspberries + blend.
  5. Blend until well combined, strain if required (my kids don’t mind the raspberry seeds but some may not).
  6. Carefully pour mixture into ice lolly moulds.
  7. Allow to freeze overnight.
  8. Enjoy at your leisure.
