These very ‘grown up’ cookies will be a huge hit among both the younger and older members of your family and friends. I absolutely adore the fact that they contain heaps of goodness, all wrapped up in heavenly peanut butter (do be sure to get 100% where possible). The boys and I make these in less than 20 minutes, start to finish, honestly they are so quick! A lovely addition to any tea party or celebration, or a simple after school/work snack.
MAKES 10-12 COOKIES
Ingredients
- Coconut Oil, melted 1/4 cup
- Coconut Sugar 1/4 cup
- 100% Maple Syrup 50ml
- Porridge Oats 1.5 cups
- Rice Flour 1/4 cup
- Smooth Peanut Butter 1/2 cup (can use chunky if preferred)
EQUIPMENT – BAKING SHEET + PARCHMENT PAPER
Instructions
- Preheat oven to 180.C or 350F.
- In a large bowl stir all wet ingredients together.
- Add in dry ingredients and mix together fully.
- Using clean hands scoop out a small handful of mixture.
- Mould into a rough shaped ball.
- Place the ball onto parchment paper on a baking sheet.
- Gently flatten with hand or spoon. Pattern with a fork.
- Repeat for remainder of mixture, placing a few cm apart.
- Place in oven and bake for 10-12 mins.
- Allow to cool fully (cookies can break if not cooled).
- Serve + enjoy!
- Replace any leftover cookies in a sealed airtight container.
